  • The erstwhile princely state of Bhopal was ruled by the Nawabs who were the descendants of the Afghans. Hence the Nawabi cuisine of Bhopal has a strong Afghan influence. The area around Bhopal is a green belt with lots of vegetable being cultivated and hence the cuisine also uses a lot of vegetables in its recipes. The cuisine also has slight Awadhi influence as some of the cooks were brought in here from Lucknow. The result is a cuisine which is truly unique.
  • Sample some of the specialties such as Giloti Kababs (though Lucknow is more famous for Giloti kababs, some believe that the recipe traces its origins to Bhopal), Qalias, Chapli Kabab, Fish Tikkas, Raans, Kormas, a variety of Naans, and some mouth-watering desserts. The menu may vary according to the season and availability of ingredients.
