  • This specially curated tour allows you to enjoy a Kashmiri feast called Wazawan, on a Houseboat. The feast is like no other and includes a large number of local dishes in an elaborate dining affair.

    The pride of Kashmiri cuisine, Wazwan is traditionally a 36-course wedding banquet which is now also served at homes on special occasions and in restaurants. The Wazawan experience includes table settings for groups of four or more people where dishes (mostly non-vegetarian) are served, each infused with aromatic herbs and fresh local produce. The unique feature of this cuisine is that the spices used are boiled rather than fried which gives the food a unique and distinctive flavour.

    Wazawan, which reflects strong Central Asian influences, is considered a true gastronomic journey, showcasing the flavours of saffron, cinnamon, cloves, cardamom, Kashmiri chilli, curds, etc woven into rista (meatballs), seekh kababs, tabak maz (fired rib cuts), rogan josh (mutton curry with generous helpings of red kashmiri chillies), chaman (fresh cottage cheese) and dum aloo (potato). Rice, bread and bakery items play an important role in this cuisine as do spinach and lotus root. The delectably flavoured Kahwa (green tea) is sipped along with this meal.

    At a certain time, almost every Kashmiri home in the plains had a professional Kashmiri cook in residence and each mealtime was an event in itself. Gradually, as the cost of living increased, the ladies of the household learnt the art and kept the tradition alive.
